Dr (Mrs) Shalini Gaur Rudra is Scientist in the Division of Food Science and Postharvest Technology, Indian Agricultural Research Institute, New Delhi. She is a mid-career food scientist with wide range of experience in teaching, training and research and is working in the field of post-harvest technology for shelf life enhancement of horticultural produce and processing of nutria-cereals and pseudo-cereals.
Dr Shalini is particularly involved in textural and rheological profiling after modification, processing or maturity of fruits. Having worked in the area of edible coating, nano-fibres, nano-emulsions, extrusion processing, baking and waste valorization, she has published more than 65 technical and scientific papers in international and national journals. She trains the farm women and is involved in projects for capacity building of farm women across North India. Dr Shalini guided 9 PhDs and worked as Co-PI in 5 externally funded research projects.
She is the Fellow of Society for Plant Research-2017; recipient of Best Feature Article Award by Association of Food Scientists and Technologists, Mysore and the Young Scientist Awardee.
