Abstract


The aim of this study was to develop biodegradable films based on buckwheat -polyol and to characterize their physicochemical, barrier and mechanical properties. Films from buckwheat starch were prepared by casting, with glycerol, sorbitol and polyethylene glycol. Increasing concentration of these plasticizers resulted in decreased tensile strength (TS) concomitant with an increase in elongation at break (E), water vapour permeability (WVP) and film solubility (FS). Films with sorbitol were less permeable to water and more rigid, while films with glycerol and polyethylene glycol are flexible structure contradictory to a tensile strength (TS) and high water vapor barrier properties. Sorbitol plasticized films, demonstrated little higher film solubility compared to polyethylene glycol and glycerol plasticized films. While color of the film was more affected by the concentration of the plasticizer used than by its type. Therefore, preparing edible films from buckwheat starch is a good and advantageous for people with celiac disease. Because which does not contain any gluten.
